Franz Hofstätter’s project takes inspiration from the beauty of imperfection, combining low-intervention winemaking with distinct black-label and white-label ranges.

THE GROWER
Wabi-Sabi takes its name from the Japanese idea of finding beauty in imperfection. In Franz Hofstätter’s project, that perspective informs a low-intervention approach that values the individuality of the wine and close attention to the vineyard.
The work includes considered pruning, natural fermentation and efforts to reduce copper and sulphur use through protective microorganisms. Two ranges express the project differently: black-label wines are produced in-house, left unfiltered and aged in oak; white-label wines come from collaborations and explore blends of grape varieties and vintages. Together, they reflect an interest in natural processes alongside careful observation and practical experimentation.
