The history of Bressan has been handed down for generations, since 1726. The winemaking process follows a natural line in which the philosophy of not forcing the transformation phases leaves the wild yeasts, naturally present on the grapes, with the task of spontaneous fermentation which always favors "typicality", absolutely not tolerating external interventions and manipulations . The task of a winemaker is reduced "only" to being that of "patiently following the wine in its personal transformation path as in a mosaic in which pieces are added every day to improve the whole: it depends on sensitivity and consummate experience of far-sighted master winemakers accompany it in its refinement, with specific times and methods, to lead it to the magical moment of tasting". The Bressan family expertly combine the ancient science of oenology with methods prior to modern technology, in the wake of respect for a very long tradition that categorically rejects that modernity that flattens everything.
