Cherubini azienda agricola is located beyond the borders of eastern Franciacorta immersed in a natural park in the Brescia hills a few km from the city centre. In this valley there is a terroir of millenary formation with aquifers underground and rocks rich in limestone with a clayey substrate. These characteristics of the soil combined with a constant light breeze and temperature variations give the wines minerality and acidity typical of the production terroir. They are not used conventional agricultural tools such as weedkillers or synthetic pesticides but nature's paths are followed. The agricultural and winemaking philosophy is designed to intervene as little as possible both in vineyard than in the cellar, hence the choice to produce classic Zero Dosage methods with only refinements in concrete tanks and sometimes barriques which guarantee products with the maximum expression of the territory of origin.
