Maxime Crotet is a young and passionate winemaker originally from Burgundy. His winemaking career began with a decade-long stint at Frédéric Cossard in Saint-Romain, where he learned organic viticulture and natural winemaking techniques. In 2021, he embarked on his own journey, founding a winery in Beaune, dedicating himself to the production of natural wines. Since he doesn't own any vineyards, Maxime selects grapes from organic and biodynamic growers from various French regions, including Burgundy, Beaujolais, and Jura. The varietals he works with include Pinot Noir, Gamay, Grenache, Syrah, and Carignan. The winemaking process is carried out without the use of chemical additives, selected yeasts, or added sulfites, respecting natural winemaking practices.
