After a decade with Frédéric Cossard, Maxime Crotet began his own Beaune project, sourcing organically and biodynamically grown grapes from across France.
THE GROWER
Originally from Burgundy, Maxime Crotet spent a decade working with Frédéric Cossard in Saint-Romain. There he developed his understanding of organic viticulture and natural winemaking before setting up his own winery in Beaune in 2021.
Without vineyards of his own, he selects grapes from organic and biodynamic growers in different French regions. The cellar work follows a natural approach, without cultured yeasts or added sulphites. This connection with growers and the characteristics of each harvest gives the project its direction: wines shaped by their origins and vintage, with limited intervention during vinification.
