Cherubini

THE GROWER

Cherubini is set in a natural park in the Brescia hills, just beyond the eastern edge of Franciacorta and a short distance from the city. Limestone-rich rock, clay subsoils and underground water form the geological setting, while gentle breezes and temperature changes influence the vineyards.

The estate avoids herbicides and synthetic pesticides, seeking minimal intervention in both vineyard and cellar. Its sparkling wines are made by the traditional method with zero dosage. Ageing takes place in concrete tanks and, for some wines, barriques. These choices are intended to preserve the freshness and mineral character associated with the estate’s soils and local climate.
