THE GROWER
Johannes Zillinger joined his family’s estate in 2000. Based in Velm-Götzendorf, it has been organic since 1984 and Demeter-certified since 2013. The estate cultivates 20 hectares and produces around 90,000 bottles a year.
Circular farming guides the vineyards: homemade compost, medicinal herbs for beneficial habitats and natural preparations, plus trees and hedges that help regulate the microclimate. Sheep, chickens and Kune Kune pigs contribute to soil fertility and biodiversity. In the cellar, Johannes explores spontaneous fermentation in amphorae, intracellular fermentation, ageing without added sulphites and the solera method. These techniques form part of an approach seeking wines with clear expression and the capacity to evolve.
