CASCINA LIETO - PIEMONTE, ITALIA

Cascina Lieto was born in 2018 from an idea by Rie and Hiroto Sasaki, in Castiglione Tinella. Hiroto has a long history in the world of wine. He has lived in Italy since 1997, in Rome until 2016, then in Piedmont. His first job was to export wines and artisanal gastronomic products to Japan.  With his wife Rie they purchased a small vineyard over 55 years old with an adjoining farmhouse to renovate. Production is around 4000 bottles per year. The project manifesto is maximum commitment and continuous research to do better. It's all a question of feeling. From the harvest, Hiroto waits for the seed to be ripe, crunchy, brown, to harvest perfectly ripe grapes but with excellent acidity. In the cellar the fermentations proceed slowly. The whole thing macerates and boils slowly. You don't do analyses, you taste.
